Improved cutting using ultrasound in bakery and confectionery, claims Döinghaus

A higher quality cut can be achieved by using ultrasound technology for confectionery and bakery products, according to technology firm Döinghaus

In this podcast, Döinghaus managing director Dieter Döinghaus talks about the potential and limitations of ultrasonic cutting technology.

Here he discusses how ultrasonic can bring advantages over hand cutting with stainless steel blades as it uses less force and vibrates to achieve a clean cut.

It is a process he claims that can be fully automated and requires little maintenance.
