The fondant beating machine HFD III is appropriate especially for high quality fondant with very smooth and uniform crystal structure. In a modular construction it has a capacity of 80 to 3600 kg/h of fondant. The high quality is achieved by a defined and controlled over saturation of the sugar solution and by a defined temperature controlled cooling of the rotor and the stator through an internal water loop.
Due to cooling and beating in just one screw, and due to its internal water loop, uncontrolled recrystallization is avoided. The HFD III is independent from existing cooling systems because of controlled, defined energy conduction by an internal water loop.
