The trade fair, which started on 29 January and runs till 1 February, is featuring 1,634 suppliers from 72 countries.
These numbers slightly beat last year's figures when,1,616 suppliers came from 70 countries.
The fair acts as a showcase for all aspects of the confectionery and snack markets, with 81 per cent of the exhibiting companies coming from outside of Germany.
34,000 trade buyers are expected to attend over the four-day event with more than 60 per cent of them from outside of Germany.
The exhibition's organisers, Koelnmesse, believe the event's strength in attracting businesses lies in the range of companies exhibiting.
"The fact that companies of all sizes exhibit side by side at ISM is one of the fair's key advantages," said Wolfgang Kranz, executive vice president of Koelnmesse.
At ISM manufacturers present only end products intended for retail trade.
However, for the first time, this year the event will overlap with ProSweets.
ProSweets is the international supplier fair for the confectionery industry and will run from today until 3 February.
Here the production, processing, packaging and machinery elements of the confectionery industry will be on show.
Exhibitors will also focus on food safety and quality management.
A programme of discussions will run alongside the two events, including a forum on how to address the upcoming football world championships as a confectionery marketing platform.
