Dr. Rich Hartel, University of Wisconsin
Dr. Rich Hartel is professor of food engineering at the University of Wisconsin, where he teaches an undergraduate elective course on Candy Science and Technology. With the University since 1986, Dr Hartel has conducted research on controlling chocolate fat bloom and sugar crystallization in confections. Fannie May chocolatier Elliott Callahan, who nominated Dr Hartel, said: "I learned more about confections and food science in two weeks at the U.W. Candy School than 20 years in the culinary industry. He is a great teacher and asset to the confections industry."
