Gato & Co plant-based start-up has launched a 'Cookies N Cream' range as a modern twist on classic cookie sandwiches, available in Boots retail shops in the UK, with more stockists to follow from Spring 2020.

The crunchy cookies with a smooth and creamy filling are free from gluten, dairy and palm oil and half the sugar of similar sweet snacks.

Our treats are vegan friendly, packed with natural ingredients and contain much less sugar. We’re thrilled to be launching our Cookies N Cream range to Boots,” said Kim Lamza, co-founder, Gato & Co.

The range includes: Choc Vanilla cookie sandwich; Choc Peanut Butter; Choc Hazelnut Butter cookies: and Salted Caramel cookie.

All made with gluten free oats and ground almonds in place of flour and nut butters and coconut oil in place of butter.

Charlotte Dauzat, founded Gato & Co in January 2017. She said she grew up in Provence with a love for simple, wholesome and naturally delicious food, but after years leading a frantic city life, this philosophy felt distant.

When I figured out that cutting refined food and embracing whole, nutritious ingredients improved my health and energy levels, I realised it was time to go back to my roots,” she said.

After several months of studying pastry training at Le Cordon Bleu in London, she created a range of free-from, indulgent sweet treats and Gato & Co was born.
