Sausage emulsifer ups the tempo

A new sausage emulsifer on the market can process ten tonnes of
meat an hour, its manufacturer claims.

CFS Australia says it EcoCut CAP-2 has raised output by about 30 per cent over its previous models. The company is attempting to meet processors' demands for faster production speeds.

CFS Australia says it was able to increase the speed through the use of a more powerful pump and comminuting system. A more efficient emulsifying head and a fully automatic knife system adds to the machine's automation of the process.

CFS said it began redeveloping its previous model, the Emulcoflow CAP-1, in an effort to provide a fully automatic emulsifying system to the market. The Emulcoflow CAP-1 processes between six and seven tonnes an hour.

"The meat market is requiring even greater flexibility,"​ CFS Australia stated in a press release. "Manufacturers know that today their customers expect a broad range of products from them - from extremely coarse to extremely tine sausages with perfect consistency, always at a reasonable price."

On both machines the knives are placed as tight as possible to the individual holeplates. A hydraulics and control technology prevents direct, metallic contact, which extends the life of the knives several fold.

At the same time, the cutting set can be adjusted fully automatically. This allows operators to change the machines parameters while production is running, allowing them to react quickly to any production fluctuation.

The EcoCut CAP-2 also works with integrated vacuum technology. Air, fat, water and protein content of a given recipe can be controlled exactly using the machine.
