Cémoi develops sensory analysis chart for cocoa mass
French-based chocolate and ingredients supplier Cémoi  has developed a color-coded sensory analysis chart that it claims will enable customers to create personalized tastes.

The company said that its Pantarôme color chart helps to detect different aromatic notes in cocoa masses.

“Pantarôme will help customers better comprehend sensory values in order to better define their personal aromatic preferences and along with assistance from a CEMOI expert they will be able to make their own choice of blends that will make their chocolate a unique one and create that difference on the market,”​ said the firm.

The chart gives a color grading based on the intensity of the cocoa and the origin. Cémoi supplies products from eight origins: Ivory Coast, Premium Ivory Coast, Ecuador, Ghana, Madagascar, Dominican Republic, Sao Tome and Venezuela.
