Gut health’s come a long way since probiotic yoghurts first hit the shelves back in the mid-80s.

Once a rarely talked about and little understood health concern, it’s now one of food and beverage most exciting categories, and worth a whopping $71.3bn (Fortune Business Insights).

And if ZOE’s global director of nutrition, Dr Federica Amati, is right, it’s only just getting started.

Gut health gets personal

One of the most significant shifts on the gut-health horizon is the move towards personalisation.

For years, nutrition advice has been built around broad population guidelines. But new research reveals that people can respond very differently to the same foods, shifting the focus towards personalised nutrition. It’s a prospect Dr Amati says is “closer than most people think”.

But that doesn’t mean population-based guidance will disappear altogether. Instead, it’ll become the foundation on which personalised recommendations are built, with technology helping to tailor that guidance to individual needs.

Smart supermarkets

For food and beverage manufacturers, one of the most promising opportunities in personalised nutrition lies at the point of purchase.

As consumers gain access to more sophisticated health data through apps, wearables and diagnostic tools, retailers could increasingly deliver tailored product recommendations based on individual health needs and goals.

A consumer with coeliac disease be directed towards suitable gluten-free products, while someone managing high blood pressure could get recommendations for products with low-salt, sugar and fat.

The challenge now lies in integrating health and food data in a way that is accurate, trusted and accessible, while ensuring consumers retain control over how their personal information is used.

But technology alone won’t shape the future of gut health. The ingredients and products available to consumers will also need to evolve to reflect advances in microbiome science.

Fibre needs a makeover

Perhaps one of the biggest missed opportunities in gut health is fibre itself.

Not because consumers haven’t heard of it. Quite the opposite.

The problem, according to Dr Amati, is that manufacturers have become overly focused on adding small amounts of a single fibre ingredient simply to qualify for a claim.

The microbiome, however, thrives on variety.

A more sophisticated approach, says Dr Amati, would focus on fibre diversity, incorporating a wider range of plant fibres rather than relying heavily on ingredients such as chicory inulin or resistant starch.

And, then there are the ingredients that seem to have been forgotten altogether.

Polyphenol power

If fibre is finally getting the attention it deserves, polyphenols remain nutrition’s overlooked hero.

Found in things like berries, extra virgin olive oil, dark chocolate and nuts, they’ve been linked to positive effects on the gut microbiome. Yet consumer awareness remains remarkably low. In fact, says Dr Amati, the commercial narrative is almost non-existent.

Part of the reason for this is regulatory. Manufacturers can make relatively few claims around polyphenol content, reducing their marketing appeal compared with more familiar nutrients like protein or fibre.

But as microbiome science advances, polyphenols may emerge as a major player in the gut health space. And they’re not the only ones.

Fermented foods are currently enjoying a resurgence, benefiting from rising consumer interest in natural and microbiome-friendly products.

Fermentation grows up

Fermented foods are booming. Kimchi, sauerkraut, kefir and other traditionally fermented products are appearing on supermarket shelves worldwide, driven by growing consumer interest in gut health, natural foods and functional nutrition.

But growth alone’s not enough. Because while many products emphasise their fermented status, not all contain meaningful levels of live microorganisms by the time they reach consumers. And others lack robust evidence linking their specific products to measurable health outcomes.

Dr Amati believes there’s still significant work to be done in ensuring fermented foods deliver genuine functional benefits, rather than simply trading on trendy health claims.

For the category to realise its full potential, a stronger focus on scientific substantiation will be required. This means moving beyond broad references to gut health and investing in research that demonstrates the impact of particular strains, fermentation processes and consumption patterns on human wellbeing.

And that isn’t the only challenge facing the industry.

GLP-1s and gut health

One of the biggest forces set to reshape the gut health industry has little to do with the microbiome itself.

GLP-1 weight-loss medications are changing how people eat.

The number of consumers using these drugs continues to grow, creating an entirely new nutritional challenge. People taking GLP-1s often eat significantly less food but still need adequate amounts of protein, fibre, vitamins and minerals.

At the same time, many experience gastrointestinal side-effects such as nausea, constipation and indigestion. This creates a huge opportunity for food manufacturers.

The gut-friendly products of the future may need to be smaller, more nutrient-dense and easier on the digestive system, helping consumers maintain nutritional adequacy without discomfort.

The future of gut health

Gut health is quickly evolving from a popular wellness trend into the cornerstone of personalised nutrition, and the technologies driving that transformation are changing just as fast. In fact, the next generation of health tracking is expected to go far beyond smartwatches and calorie counters.

Dr Amati points to emerging multi-analyte biosensors capable of continuously measuring factors such as glucose, lipids, hormones and markers of inflammation. Combined with AI, these tools could generate highly personalised nutrition and health recommendations in real time, helping consumers make decisions based not on population averages, but on their own biology.

Further ahead lies the concept of a digital twin - a personal health model built from years of biological and behavioural data that could help predict future health outcomes and identify risks before they emerge. While the technology is exciting, it also raises important questions around privacy, ownership and data security that will need to be addressed as adoption grows.

What’s abundantly clear is the future of gut health won’t be defined by a single superfood, probiotic strain or miracle supplement. Instead, it’ll be shaped by the convergence of microbiome science, personalised nutrition, AI, preventative medicine and smarter food design.

For consumers, that could mean more tailored advice, earlier disease detection and products designed around long-term health rather than short-term marketing claims.

For the food industry, it represents a fundamental shift in thinking, with the focus no longer on simply creating delicious products, but on developing foods and beverages that make a measurable contribution to long-term health and wellbeing.
