ADM Cocoa has introduced a low fat cocoa powder that it claims is well suited to nougats and other protein foam based confectionery that lose structure in the presence of fat.

The firm has added 0.5% fat cocoa powder, D-00-ZR, to its deZaan range.

Nougat-based confectionery

Rinus Heemskerk, global director of innovation, ADM Cocoa International, said:“D-00-ZR can be used in any cocoa powder in a confectionery product in which the customer would like to lower the fat content or reduce calorie contribution.”

ADM said the powder was particularly effective in products based on protein foam such as nougats,  and meringues, which can lose structure when using cocoa powders containing over 10% fat.

“Fat negatively impacts the stability of the foam. By using D-00-ZR, which has only 0.5 % fat, this does not occur and good aeration can be maintained without extra precautions,” ​said Heemskerk.

Low fat claims and flavor

He said that the mere replacement of cocoa powder by D-00-ZR will not automatically lead to low or reduced fat packaging claim, but could contribute to lowering the fat threshold for a low or reduced fat claim subject to the fat content of other ingredients in the formulation

ADM claims that D-00-ZR’s production process enables the cocoa solids to maintain an intense chocolaty flavour.

“Consumers nowadays are more health-conscious but still look for great flavours and indulgence,”​ said the company in a statement.

The launch comes soon after ADM Cocoa was put up for sale​ by the ADM Group. Cargill has been touted as a potential buyer, but has refused to comment on speculation.
